Abstract
Glucose is converted to fructose in the presence of an enzyme preparation derived from a member of the genus Arthrobacter.

10. A process according to claim 8 in which said enzyme is derived from .[.an.]. .Iadd.said .Iaddend.Arthrobacter micro-organism grown in a nutrient medium containing xylan.
11. A process according to claim 8 in which said enzyme is derived from .[.an.]. .Iadd.said .Iaddend.Arthrobacter micro-organism grown in a nutrient medium containing glucose.

A process according to claim 8 in which the incubation is carried out at a temperature of about 50° C. to about 90° C. in a pH range of approximately 6.0 to 10.0 and said enzyme is derived from .[.an.]. .Iadd.said .Iaddend.Arthrobacter micro-organism grown in a nutrient medium containing xylose or xylan.

A process according to claim 8 in which the incubation is carried out at a temperature of about 50° C. to about 90° C. in a pH range of approximately 6.0 to 10.0 and said enzyme is derived from .[.an.]. .Iadd.said .Iaddend.Arthrobacter micro-organism grown in a glucose-containing nutrient medium in the absence of xylose or xylan.
