A new cultivar of Hydrangea paniculata plant named ‘GRYPAST05’ that is characterized by its inflorescences with sterile flower sepals that are creamy white in color and remain creamy white as they mature, its inflorescences with sterile flower sepals that are star-shaped, its compact plant habit, and its strong flower stems.
