Abstract

Described is a method for the preparation of a gelatin hydrolysate having a decreased endotoxin content, comprising the steps of incubating a solution of gelatin of gelatin hydrolysate at a temperature of 70-125° C. at a pH of 3.5 or less for a time period of at least 15 minutes, and recovering the gelatin hydrolysate. Further a gelatin hydrolysate thus obtained is described.

         14 . A gelatin hydrolysate composition having an endotoxin content of 20 EU/g gelatin hydrolysate or less,
 wherein the gelatin hydrolysate has a molecular weight of 30 kDa or less, and   wherein the gelatin hydrolysate is free of surfactant and enzyme.   
     
     
         15 . Gelatin hydrolysate of  claim 14  having an endotoxin content of 10 EU/g gelatin hydrolysate or less. 
     
     
         16 . Gelatin hydrolysate of  claim 14  having an endotoxin content of 4 EU/g gelatin hydrolysate or less. 
     
     
         17 . Gelatin hydrolysate of  claim 14  having an endotoxin content of 2 EU/g gelatin hydrolysate or less. 
     
     
         18 . Gelatin hydrolysate of  claim 14  having an endotoxin content of 1 EU/g gelatin hydrolysate or less. 
     
     
         19 . Gelatin hydrolysate of  claim 14  having a molecular weight of 20 kDa or less. 
     
     
         20 . Gelatin hydrolysate of  claim 14  having a molecular weight of 10 kDa or less. 
     
     
         21 . Gelatin hydrolysate of  claim 14  having a molecular weight of 4 kDa or less. 
     
     
         22 . Gelatin hydrolysate of  claim 14  obtainable by a method comprising the steps of:
 a) incubating a solution of gelatin or gelatin hydrolysate at a temperature of 80-96° C. at a pH of 3.5 or less for a time period of at least 15 minutes, and 
 b) recovering the gelatin hydrolysate having a decreased endotoxin content. 
 
     
     
         23 . Gelatin hydrolysate of  claim 22 , wherein the pH in step a) is 3.0 or less. 
     
     
         24 . Gelatin hydrolysate of  claim 22 , wherein the pH in step a) is 2.7 or less. 
     
     
         25 . Gelatin hydrolysate of  claim 22 , wherein the time period n step a) is 30 minutes or more. 
     
     
         26 . Gelatin hydrolysate of  claim 22 , wherein the time period n step a) is 1-5 hours. 
     
     
         27 . Gelatin hydrolysate of  claim 22 , being free of an enzymatic treatment step. 
     
     
         28 . Gelatin hydrolysate of  claim 22 , wherein in step a) the gelatin or gelatin hydrolysate has a molecular weight of more than 70 kDa. 
     
     
         29 . Gelatin hydrolysate of  claim 22 , wherein no surfactant is added to the gelatin or gelatin hydrolysate in step a) or step b).
