Abstract

Methods for purifying steviol glycosides, including Rebaudioside X, are provided herein. Sweetener and sweetened containing Rebaudioside X are also provided herein. Methods of improving the flavor and/or temporal profile of sweetenable compositions, such as beverages, are also provided.

         61 . A carbonated beverage comprising a sweetener composition comprising Reb X, wherein the concentration of Reb X in the beverage is from about 100 ppm to about 600 ppm.

The carbonated beverage of  claim 61 , wherein the carbonated beverage is selected from the group consisting of an enhanced sparkling beverage, cola, lemon-lime flavored sparkling beverage, orange flavored sparkling beverage, grape flavored sparkling beverage, strawberry flavored sparkling beverage, pineapple flavored sparkling beverage, ginger ale, soft drink and root beer. 
     
     
         63 . The carbonated beverage of  claim 61 , wherein the carbonation is 0.1 to 1% (w/w) carbon dioxide. 
     
     
         64 . The carbonated beverage of  claim 61 , wherein the carbonation is 0 to 8 volumes of carbon dioxide. 
     
     
         65 . The carbonated beverage of  claim 61 , wherein the carbonation is 0.5-6 volumes of carbon dioxide. 
     
     
         66 . The carbonated beverage of  claim 61 , wherein Reb X is provided as a mixture of steviol glycosides that comprises from about 80% to about 99% Reb X by weight on a dry basis. 
     
     
         67 . The carbonated beverage of  claim 61 , wherein the sweetener composition further comprises erythritol which, in combination with Reb X, function as the sweetener component. 
     
     
         68 . The carbonated beverage of  claim 67 , wherein erythritol comprises from 0.1% to 3.5% by weight of the sweetener component. 
     
     
         69 . The carbonated beverage of  claim 61 , further comprising ethanol. 
     
     
         70 . The carbonated beverage of  claim 61 , wherein the pH is from about 1.8 to about 10. 
     
     
         71 . The carbonated beverage of  claim 70 , wherein the pH is from about 2 to about 5.
