Abstract
The invention describes a sweetener of glycosylated steviol glycosides and a rebaudioside in an aqueous solution for convenience of use in the food and beverage industry.

30 . A composition comprising:
a first component comprising at least 70% by weight glycosylated steviol glycosides (GSGs), wherein the first component is derived from a Stevia extract comprising 20-99.5% rebaudioside A (RA) by weight; and a second component comprising 20-99.5% RA by weight, wherein the weight ratio of the first component:the second component is in the range of 1:6 to 3.5:1.
31 . The composition of claim 30 , wherein the composition has a measured sucrose equivalence that is greater than the calculated sucrose equivalence of the composition.
32 . The composition of claim 30 , wherein the composition has a reduced bitterness or lingering compared to the second component.
33 . The composition of claim 30 , wherein the composition comprises less than 70% GSG by weight.
34 . A method of improving the taste prof i le or flavor of a food or beverage, comprising:
adding an effective amount of the composition of claim 1 to the food or beverage.
35 . The method of claim 34 , wherein the composition is present in the food or beverage at a concentration of 50-2000 ppm.
36 . The method of claim 34 , wherein the composition is present in the food or beverage at a final concentration of 200 ppm or less.
37 . The method of claim 34 , wherein the composition is present in the food or beverage at a final concentration of 100 ppm or less.
38 . A beverage comprising a GSG-containing composition, wherein the GSG-containing composition is derived from a steviol glycoside (SG) composition comprising 20-99.5% RA by weight and wherein the GSG-containing composition is present in the beverage in a concentration of 200 ppm or less, or in an amount that produces a calculated sweetness of 2% SE or less.
39 . The beverage of claim 38 , wherein the GSG-containing composition is present in the beverage in a concentration of 200 ppm or less.
40 . The beverage of claim 38 , wherein the GSG-containing composition is present in the beverage in a concentration of 100 ppm or less.
41 . The beverage of claim 38 , wherein the GSG-containing composition is present in an amount that produces a calculated sweetness of 2% SE or less.
42 . The beverage of claim 38 , wherein the GSG-containing composition is present in an amount that produces a calculated sweetness of 1.5% SE or less.
43 . The beverage of claim 38 , wherein the GSG-containing composition comprises less than 70% GSG by weight.
44 . The beverage of claim 38 , wherein the beverage comprises a non-SG sweetener.
45 . A method of improving the flavor of a beverage, comprising:
adding an effective amount of a GSG-containing composition to the beverage, wherein the GSG-containing composition is present in the beverage at a final concentration of 200 ppm or less, or in an amount that produces a calculated sweetness of 2% SE or less, and wherein the GSG-containing composition is derived from a composition comprising 20-99.5% RA.
46 . The method of claim 45 , wherein the GSG-containing composition is present in the beverage in a concentration of 200 ppm or less.
47 . The method of claim 45 , wherein the GSG-containing composition is present in the beverage in a concentration of 100 ppm or less.
48 . The method of claim 45 , wherein the GSG-containing composition is present in an amount that produces a calculated sweetness of 2% SE or less.
