A Pediococcus acidilactici strain that survives incubation for 24 hours at 85° C. and multiplies more than 800 fold after subsequent overnight incubation at 50° C.

1 . A Pediococcus acidilactici strain that survives incubation for at least 16 hours at 85° C. and multiplies more than 800 fold after subsequent overnight incubation at ≧45° C.
2 . A Pediococcus acidilactici strain according to claim 1 , that survives incubation for at least 24 hours at 85° C. and multiplies more than 800 fold after subsequent overnight incubation at ≧45° C.
3 . A Pediococcus acidilactici strain according to claim 1 , that survives incubation for at least 16 hours at 85° C. and multiplies more than 800 fold after subsequent overnight incubation at 50° C.
4 . A method of dietary augmentation, comprising administering to a human or animal a probiotic composition containing the Pediococcus acidilactici strain of claim 1 .
5 . A Pediococcus acidilactici strain according to claim 1 , deposited in the Agricultural Research Service (ARS) Patent Culture Collection as NRRL B-50517.

8 . A method according to claim 7 , wherein said strain is deposited in the Agricultural Research Service (ARS) Patent Culture Collection as NRRL B-50517.
9 . A Pediococcus acidilactici strain that is viable at temperatures between 75° C. and 85° C. while in a pH range between 1 and 4.0 and is able to grow in aerobic and anaerobic conditions.
10 . A Pediococcus acidilactici strain according to claim 9 that is viable at a temperature between 80° C. and 85° C.
