Abstract

Processes for producing whole soybean powders and soymilks are described.

1 . A process for preparing a soya fiber particulate, comprising:
 wet grinding a composition comprising dehulled whole soybeans, including okara, to yield a soya fiber particulate having a particle size in a range of about 0.01 microns to about 100 microns, wherein at least about 50% to about 100% of the soya fiber particulates have a size in a range of about 0.01 microns to about 35 microns; and   homogenizing the composition.   
     
     
         2 . The process of  claim 1 , further comprising pasteurizing the composition at a temperature of about 65° C. to about 155° C. for at least 4 seconds. 
     
     
         3 . The process of  claim 1 , further comprising spray drying the composition. 
     
     
         4 . The process of  claim 1 , wherein the composition consists of the dehulled whole soybeans. 
     
     
         5 . The process of  claim 1 , further comprising jet cooking the composition at a temperature between 100-140° C. 
     
     
         6 . A process for preparing a soya fiber particulate, the process comprising:
 grinding a compositing comprising dehulled soya in water to yield a soya fiber particulate having a particle size in a range of 0.01 microns to 100 microns, wherein at least 50% to 100% of the particles of soya fiber particulate has a size in a range of 0.01 microns to 35 microns;   pasteurizing and/or sterilizing the composition in the water used for the grinding; and   homogenizing the composition in the water used for the pasteurizing and/or sterilizing to yield a soya fiber particulate.   
     
     
         7 . The process of  claim 6 , further comprising dehydrating the composition. 
     
     
         8 . The process of  claim 6 , wherein the pasteurizing and/or sterilizing comprises heating the composition to a temperature in a range of 50° C. to 175° C. for at least 4 seconds. 
     
     
         9 . The process of  claim 6 , wherein the grinding is performed by a bead mill or a ball mill. 
     
     
         10 . The process of  claim 7 , wherein dehydrating the composition comprises spray-drying the composition. 
     
     
         11 . A method comprising:
 cracking and dehulling soybeans, thus producing a composition consisting of soybean cracks;   placing the composition in water;   grinding the composition in the water;   heating the composition in the water to a temperature of between 65° C. and 155° C.; and   homogenizing the composition in the water.   
     
     
         12 . The method according to  claim 11 , further comprising drying the composition. 
     
     
         13 . The method according to  claim 11 , further comprising grinding the composition in the water a second time. 
     
     
         14 . The method according to  claim 11 , wherein grinding the composition comprises bead milling. 
     
     
         15 . The method according to  claim 11 , wherein heating the composition comprises jet cooking the composition at a temperature between 100-140° C. 
     
     
         16 . The method according to  claim 11 , further comprising producing a soymilk with the homogenized composition. 
     
     
         17 . The method according to  claim 11 , wherein the composition consists of the soybean cracks. 
     
     
         18 . The method according to  claim 11 , wherein the composition is 40-45% protein, 19-24% fat, and 16-19% total dietary fiber. 
     
     
         19 . The method according to  claim 12 , further comprising producing a soymilk with the dried composition.
