Abstract

Process for the preparation of a hydrolysed casein product comprising tripeptides VPP, IPP and /or LPP, wherein a substrate comprising casein or casein fragments is subjected to enzyme treatment wherein the enzyme is derived from Aspergillus, wherein the enzyme concentration is 2-10 wt. % based on casein and that the enzyme has a high proteolytic activity.

Process for the preparation of a hydrolysed casein product comprising tripeptides VPP, IPP and and/or LPP, wherein a substrate comprising casein or casein fragments is subjected to enzyme treatment wherein the enzyme is derived from  Aspergillus,  characterised in that the enzyme concentration is 2-10 wt. % based on casein and that the enzyme has a high proteolytic activity. 
     
     
         2 . Process according to  claim 1 , wherein the enzyme concentration is 2-5 wt. % on casein. 
     
     
         3 . Process according to  claim 1 , wherein the enzyme has a X-Prolyl dipeptidyl aminopeptidase activity or 400 U/kg or more. 
     
     
         4 . Process according to  claim 1 , wherein the enzyme comprises endopeptidase, exopeptidase and proteinase. 
     
     
         5 . Process according to  claim 1 , wherein the enzyme is derived from  Aspergillus oryzae.    
     
     
         6 . Process according to  claim 1 , involving a step in which fermentation with  Lactobacillus helveticus  takes place. 
     
     
         7 . Process according to  claim 6 , wherein the fermentation is conducted prior to the enzyme treatment. 
     
     
         8 . Process according to  claim 1 , wherein the IPP yield is 60% or more. 
     
     
         9 . Process according to  claim 7 , or wherein the VPP yield is 50% or more. 
     
     
         10 . Hydrolysed casein product comprising 200 uM or more of IPPeq, preferably comprising 400 uM or more of IPPeq. 
     
     
         11 . Hydrolysed casein product according to  claim 10  having a non-bitter taste. 
     
     
         12 . Hydrolysed casein product according to  claim 10 , wherein the hydrolysed casein product is dried. 
     
     
         13 . Hydrolysed casein product according to  claim 12 , wherein the hydrolysed casein product is spray-dried or freeze-dried. 
     
     
         14 . Hydrolysed casein product according to  claim 1 , obtainable by a process according to any of  claims 1 - 9 . 
     
     
         15 . Food product comprising a hydrolysed casein product according to  claim 9 . 
     
     
         16 . Hydrolysed casein product comprising of 500 pM or more BPPeq. 
     
     
         17 . Process according to  claim 1 , wherein the molar yield of LIT is 20% or more. 
     
     
         18 . Process according to  claim 17 , wherein the molar yield of LPP is 45% or more. 
     
     
         19 . Process according to  claim 17 , wherein the molar yield of 80% or more. 
     
     
         20 . Food product comprising a hydrolysed casein product according to  claim 9 , comprising 25 μM LPP or more.
