Abstract
The invention concerns bacteria strains, obtained from gram-positive bacteria whereof the genome size is not more than 3.2 Mb, and wherein the HtrA surface protease is inactive. Said strains are useful for expressing exported proteins of interest.

12 . A method of producing a dietetic food, comprising: culturing a bacterial strain with a substrate under conditions suitable to produce a dietetic food, wherein the bacterial strain does not express a functional HtrA.
13 . A method of producing a medicinal product, comprising: culturing a bacterial strain with a suitable substrate under conditions effective to produce a medicinal product, wherein the bacterial strain does not express a functional HtrA.
