Meat-like food materials and meat-like food products produced utilizing the same

Abstract

The present invention provides a meat-like food material having a favorable flavor and a meat-like mouthfeel by heating and pressurizing ingredients including a vegetable protein ingredient, a milk whey protein ingredient and water as the main ingredients with an extruder to obtain a swollen product, and a fried meat-like food product by reconstituting said meat-like food material with a seasoning liquid followed by frying, as well as a glazed fried meat-like food product by coating said fried meat-like food product with a glaze.

1 . A meat-like food material produced by heating and pressurizing ingredients including a vegetable protein ingredient, a milk whey protein ingredient and water as the main ingredients with an extruder to obtain a swollen product.  
     
     
         2 . The meat-like food material according to  claim 1 , wherein the ratio of the vegetable protein ingredient to the milk whey protein ingredient is 95/5 to 45/55 (as dry solid weight ratio).  
     
     
         3 . The meat-like food material according to  claim 1  wherein the vegetable protein ingredient is derived from soybeans.  
     
     
         4 . A meat-like food product produced by reconstituting the meat-like food material according to  claim 1  with a seasoning liquid followed by cooking.  
     
     
         5 . A fried meat-like food product produced by reconstituting the meat-like food material according to  claim 1  with a seasoning liquid followed by frying.  
     
     
         6 . A glazed fried meat-like food product produced by reconstituting the meat-like food material according to  claim 1  with a seasoning liquid followed by frying and then by coating the fried meat-like food product thus obtained with a glaze.  
     
     
         7 . The meat-like food product according to  claim 4 , wherein a saccharide is present in an amount of 2% to 25% by weight based on the meat-like food product.  
     
     
         8 . The meat-like food product according to  claim 4 , wherein an emulsified oil or fat is present in an amount of 2% to 25% by weight based on the meat-like food product.  
     
     
         9 . The meat-like food product according to  claim 4 , wherein egg white is present in an amount of 2% to 20% by weight as a dry solid content based on the meat-like food product.  
     
     
         10 . The meat-like food material according to  claim 2 , wherein the vegetable protein ingredient is derived from soybeans.  
     
     
         11 . A meat-like food product produced by reconstituting the meat-like food material according to  claim 2  with a seasoning liquid followed by cooking.  
     
     
         12 . A meat-like food product produced by reconstituting the meat-like food material according to  claim 3  with a seasoning liquid followed by cooking.  
     
     
         13 . A fried meat-like food product produced by reconstituting the meat-like food material according to  claim 2  with a seasoning liquid followed by frying.  
     
     
         14 . A fried meat-likefood product produced by reconstituting the meat-like food material according to  claim 3  with a seasoning liquid followed by frying.  
     
     
         15 . A glazed fried meat-like food product produced by reconstituting the meat-like food material according to  claim 2  with a seasoning liquid followed by frying and then by coating the fried meat-like food product thus obtained with a glaze.  
     
     
         16 . A glazed fried meat-like food product produced by reconstituting the meat-like food material according to  claim 3  with a seasoning liquid followed by frying and then by coating the fried meat-like food product thus obtained with a glaze.  
     
     
         17 . The meat-like food product according to  claim 5 , wherein a saccharide is present in an amount of 2% to 25% by weight based on the meat-like food product.  
     
     
         18 . The meat-like food product according to  claim 6 , wherein a saccharide is present in an amount of 2% to 25% by weight based on the meat-like food product.  
     
     
         19 . The meat-like food product according to  claim 5 , wherein an emulsified oil or fat is present in an amount of 2% to 25% by weight based on the meat-like food product.  
     
     
         20 . The meat-like food product according to  claim 6 , wherein an emulsified oil or fat is present in an amount of 2% to 25% by weight based on the meat-like food product.
